Toffee Crusted Rhubarb Pudding

Toffee Crusted Rhubard

  • 4 Cups Diced Rhubarb
  • 1/4 Cup Boiling Water
  • 3/4 Cup Flour
  • 1 Teaspoon Baking Powder
  • 1/2 Cup Rolled Oats
  • 3/4 Cup Sugar
  • 100 Grams Melted Butter

Toffee Crusted Rhubarb Pudding Directions

  1. Mix four, baking powder, rolled oats and sugar.  Then mix in melted butter.
  2. For the topping -
  3. ¾ cup brown sugar
  4. 1 tablespoon corn flour
  5. Combine brown sugar and corn flour.

Recipe notes

Put diced rhubarb into 4 greased ovenproof dishes e.g. cappuccino cups or ramekins. Sprinkle crust mixture evenly over rhubarb. Spoon on topping mixture.

Carefully pour the water over the topping.  Do not stir or mix in.

Bake for 30 minutes at 180°C.

If desired dust with icing sugar and serve with softly whipped cream.
