Special Christmas Cookies

  • 125 Grams Butter
  • 1 Cup Sugar
  • 1 Fresh Egg
  • 1 Teaspoon Vanilla
  • 1 Teaspoon Mixed Spice
  • 1 1/4 Cups Flour
  • 1/2 Teaspoon Baking Powder
  • 1/2 Teaspoon Salt
  • 1 Cup Chopped Nuts, walnuts, pecans etc
  • 1 Cup Dark Chocolate Chips
  • 1 Cup Coarse Thread Coconut
  • 1 Cup Mixed Red & Green glace cherries, each chopped into 2 – 3 pieces

Special Christmas Cookies Directions

  1. Preheat oven to 170°C.  Line two oven trays with baking paper.
  2. Beat the butter and sugar together until creamy.  Mix in the egg and vanilla and then the remaining ingredients.
  3. Put teaspoonfuls of mixture onto the prepared trays, not too closely together as they will spread out a little, and flatten with a wet fork.  Bake for 15 minutes.  Cool on a wire rack.  Store in an airtight container or sealed in cellophane for gift giving.

Note, these can be half dipped or drizzled in melted chocolate as an extra treat.
